A stay at the Cartier Mansion is a food lover’s paradise. Many ingredients are sourced locally, including the Signature Sausage, procured from the local butcher and ground and seasoned at the inn. Ludington is located amongst many farms and orchards, and local produce and fruit are often included seasonally in the breakfast, including eggs and produce from Campbell Crossing Farms.
We recently asked innkeeper Chris to share a recipe, and we were delighted when he passed on his Ratatouille Recipe. The inn serves this with homemade toasted sourdough bread and poached eggs- YUM!
Cartier Mansion's Ratatouille Recipe
From Chris: “Here’s our Ratatouille recipe. We adjust for seasonal fresh veggies, make our sourdough from scratch, and are actually using kale oil now.”
Ratatouille
10 servings
- 1 butternut squash
- 1 bell pepper
- 1 zucchini
- 1 shallot
- 1 large can of petite diced tomatoes
- 2 T tomato paste
- Sourdough
- 10 eggs
- Parsley oil (equal parts oil and parsley)
Dice vegetables small and evenly. Cook on the stove in a Dutch oven with olive oil and salt until they start to soften. Add in tomatoes and tomato paste. Adjust seasoning. Cook until flavors come together but vegetables still have a bit to them.
Grill sourdough slices with olive oil drizzle.
Poach eggs.
