Quacking Good Lemon Curd: A Duck Egg Twist at Maple Cove B&B

Nestled amidst the serene landscapes of Leonard, Michigan, the Maple Cove B&B beckons travelers seeking respite from the hustle and bustle. But it’s not just the cozy rooms and tranquil gardens that make this boutique country inn special—it’s the culinary magic happening in their kitchen.

Mark and Jan, the talented innkeepers, have crafted a lemon curd recipe that dances on the taste buds. What sets it apart? The secret lies in the duck eggs they lovingly incorporate. These rich, golden gems lend an extra layer of creaminess and depth to the classic lemon curd.

Picture this: sun-kissed lemons, their zest, and juice mingling with the velvety yolk of duck eggs. The result? A curd that’s simultaneously tangy, luscious, and utterly unforgettable. Spread it on warm scones, drizzle it over pancakes, or sneak a spoonful straight from the jar—no judgment here!

Maple Cove B&B Duck Egg Lemon Curd Recipe

Jan has graciously shared her recipe with us:

Duck Egg Lemon Curd Recipe

Recipe Adapted From Tyrant Farms from Pinterest.

Servings: 8

Ingredients:

1 Cup Fresh Lemon Juice. (usually about 3 large or 4 medium lemons).

¼ Cup + 1 Tablespoon Lemon Zest

4 Duck Eggs

1 Cup Sugar (200 grams)

1 Cup Butter ( 2 sticks / 227 grams) Cut Into Cubes (I used unsalted)

½ Teaspoon Salt

1 Teaspoon Lemon Paste

Instructions:

Prep all ingredients and place within arm’s length of your stovetop.

Whisk eggs and sugar together in a cold saucepan, then place over medium-low heat and continue to whisk until smooth. Approximately 3 minutes.

Slowly add lemon juice and zest, whisking continuously.

Add salt, lemon paste then begin adding butter one cube at a time until incorporated. Continue whisking as the mixture cooks and thickens for about 10 minutes. It never takes that long for me but it is a good target.

Remove from heat (you can strain if you don’t like the zest in it, I love it in so I do not). Pour warm curd into jars and refrigerate before serving.
